Why Is It Important To Know Where Your Coffee Comes From?
At KIN+ILK, we take pride in knowing exactly where our coffee comes from, ensuring each cup is of the highest quality and responsibly sourced and this is all done via our direct trade relationship with our incredible farmer, Fernando Lima.
We source from Fernando, a farmer with over 45 years of experience and multiple Cup of Excellence awards. His washed coffee beans, originally from the Island of Bourbon, offer clean, bright flavours with a sweet, balanced acidity, reflecting the unique qualities of the farm's soil and altitude.
We got in touch with Fernando for a 2024 crop update.. This is what Fernando said “El Corozo, a former COE farm, is located at one of the highest points of the Santa Ana Volcano. It spans 50 hectares and was covered in ash from an eruption in 2005. The most recent harvest began in January and finished in May 2024, with excellent results. We processed the crop at Balcanes Coffee Micro Mill using rainwater with an ideal pH of 7.0 for fermentation. The weather was favourable, and yields are increasing by 5% each year as the plants continue to grow”
Direct trade for us ensures farmers like Fernando receive fair wages, even when market prices fluctuate. This partnership fosters sustainable farming practices and supports local communities by empowering farmers to invest in their land and improve crop quality. It also guarantees ethical working conditions throughout the production process.
