Spotlighting: Ikomiki

Over the past year, matcha has totally blown up, and for good reason. Not only is it absolutely delicious, but it’s also packed with health benefits. We’ve actually been serving matcha since before COVID, but it’s really in the past 18 months that this drink has become a true star. And we’ve loved every second of experimenting with new drinks, flavours, and ways to serve it.

Our matcha is sourced directly from Japan through Ikomiko, a brand founded by a Japanese designer and certified tea ceremony master. This isn’t your average matcha. It’s made from young, first-flush tea leaves, carefully shaded from sunlight, then steamed, dried, de-veined, and stone-ground into a fine, vibrant powder. Before it becomes matcha, the raw leaf is known as tencha, and only the highest quality makes it into our cups. What you’ll taste is a clean, deep green colour, a smooth and creamy texture, and a naturally sweet, mellow flavour. No bitterness. No shortcuts.

Let’s talk about how it’s made. While most cafés prepare a big batch in the morning and serve it throughout the day - which isn’t necessarily a bad thing - we do things differently. At KIN+ILK, your matcha is made fresh, every single time, right in front of you. That means better taste, brighter colour, and the full experience matcha is meant to deliver. When something’s this special, it deserves to be treated with care.

Another reason matcha has become so popular is its health benefits. A lot of people don’t realise that matcha actually has more caffeine than coffee, but it’s released much more slowly. That means no jittery high, no crashing low, just smooth, sustained energy. It’s also packed with antioxidants and other good stuff that support brain function, help you relax, and keep you feeling good. And of course, it tastes amazing.

This year we’ve released two matcha menus: one in March (for Matcha March, obviously) and one for summer. In the March menu, we launched a pistachio and matcha whipped cream - it was such a hit, we’ve kept it on our summer menu (at St Davids only). Right now, you’ll also find the Raspberry & Coconut Matcha and our Sparkling Elderflower Matcha.
